Cauliflower Couscous with Roasted Apples & Sausage


Cauliflower couscous. Who would have thought?
I know it doesn't look all that pretty - but trust me folks. This stuff is super tasty. 
 

A few friends of mine are trying this Paleo diet thing, where they basically avoid carbs and eat lots of protein and veggies. 

I was looking through a few of the suggested "meals" and there was mention of this cauliflower thing that acts like couscous. 

So - not wanting any of you people to miss out on this new popular food trend - I tried it. 

And it was good!! 

Diet, schmiet. This sucker is going into the dinner rotation!

It's a good thing Mr. S is out of town this week and next. Otherwise he'd be getting 5 square dinners of cauliflower couscous each week. Those things are on sale for, like, 2 for $5! Cheap and delicious!

Start off with a head of cauliflower. Chop off the florets and put about half of them in the food processor.


Blitz until there are small little pieces that look like couscous. Do the same with the second half of the head.


Chop up some onion, apples, and brussels sprouts.


Toss them in a bit of oil, salt and pepper and roast them for 30 minutes, if not longer. Mmmmmm. 


Fry up some sausage - bratwurst was on sale, so I used that, but any sausage you like will do. 


Take out your biggest skillet and put a tbsp of oil in the bottom. Sautee the cauliflower cous cous until browned, adding a bit more oil here and there so it doesn't burn. (This takes at least 10 minutes if you have a ginormous head of cauliflower and a not so ginormous skillet). 


Once the cauliflower is browned, dump the roasted veggies and the sausage on top. 



It's healthy (sorta) and delicious!!

Cauliflower Couscous with Roasted Apples & Sausage
Makes enough for 5-6

1 large head of cauliflower
2-3 apples
1 large red onion
1 bag of brussles sprouts
4 pieces of sausage (I used bratwurst)
olive oil
salt & pepper

Preheat your oven to 400 degrees. Chop the apples, onion, and brussles sprouts up into hefty chunks. Toss them in olive oil and salt and pepper. Roast for at least 30 minutes. If not more. Until browned and delicious.

Chop down the cauliflower into florets. Pulse half of them in the food processor until diced into small bits that resemble couscous. Pour a tbsp of oil in a large skillet and saute until golden. 

While cauliflower is sauteeing, cook up sausage. Cut into bite sized pieces. 

Mix couscous with the roasted veggies and sausage.
